This Junmai Daiginjo is made with a rare sake rice called "Wataribune" which was previously extinct. The original sake has a pineapple like nose with dry refreshing bitterness, vibrant acidity, and a clean refreshing sweetness. Nine months of aging in a whisky barrel gives it a vanilla nose at the front and a deep smoky flavour. Recommended to drink chilled, on the rocks, or at room temperature.
