About NOMU

Our
Work

Nomu is a project that showcases the sake from one specific region in Japan, to feature their local history and culture, and methods of brewing sake. Re-branding is being undertaken to promote these breweries, spreading their reputation and seeking new sales markets both inside and outside of Japan.

Fuji no Sake

Under the name of Fuji no Sake,

we are introducing high quality sake

from the Shizuoka region,

known as the “Kingdom of Ginjo”.

02

Nomu

“Nomu” is presenting the project “Fuji no Sake” which showcases 9 Shuzo (sake breweries) and 1 Chozou-jo (aged sake producer) from Shizuoka Japan. Shizuoka produces a variety of natural ingredients from the mountains to the sea, such as the iconic Mt Fuji, and Suruga Bay, the deepest bay in the country, which in turn provides one of the richest food cultures in Japan.

Shizuoka

While cold regions and famous rice-producing regions tend to be more well known for sake breweries, Shizuoka has put in time and effort to develop their own Shizuoka Kobo (yeast) which suits their warm climate, and to cultivate Homarefuji which is their own locally grown species of rice developed to suit sake making. The breweries have also installed equipment to help maintain lower temperatures, disproving the theory that regions with a warmer climate cannot produce high quality sake.

Melbourne

We want the people of Melbourne to enjoy “Fuji no Sake” from Shizuoka, some of the most sophisticated sake producers in recent years and to appreciate their story and passion.
